- Entrée: Hervey Bay scallop crudo with buttermilk, kaffir lime kosho and daikon, or heirloom beetroot with mille feuille, milk cheese and horseradish
- Main: Southern Ranges beef fillet with confit kipfler, mushroom and sauce bordelaise, or sugar loaf cabbage with kipfler mousseline, leek filaments and toasted nori, or Infinity Blue barramundi with confit leeks, bouillabaisse and radish salad
- Dessert: Caramelised apple parfait with berries, honey mousse and caramel, or a cheesemonger selection with seasonal chutney, lavosh and fruits
