Led by award-winning pitmaster Ross Walker, you'll learn the techniques behind great low-and-slow cooking, from fire management and temperature control to seasoning, smoking and resting meats for maximum flavour.
Working across a range of popular smokers, you'll gain practical skills you can confidently recreate at home while enjoying a feast of barbecue favourites including Wagyu brisket, sticky pork belly, smoked chicken wings and reverse-seared Wagyu steaks.
